Butter chicken – light tasty food for dinner. It’s easy and delish!

First: sauté onions and garlic in sunflower oil.

Add a tad of water, not to burn, and season with curry powder, coriander and masala. Add a touch of salt.



Add cubed chicken and cook until done. Add 1/2 can tomato paste, 1 can of coconut milk, par boiled potatoes that are cut up. Add to sauce …

… stir and simmer for 15 minutes or so.

Season to taste.

Then add 1 tablespoon of butter and 1 small Greek yogurt and a small can of peas, drained. If you use frozen peas, add with the potatoes.

Mix until warm. For more flavor, add more curry powder! Serve over rice – garnish with chopped cilantro:
