Zucchini Pancakes

Summertime means quick snacks! Whatβs better than zucchini pancakes?! A super easy snack! This is also the same base for corn fritters – with a little protein from the eggs!
Grate zucchini into strips …
… with your box grater.
Add:
3 eggs
a cup and a half of flour
Add a tablespoon of instant baking powder and a pinch of salt.
If you have fresh mint or basil add a handful of this chopped fresh spice to enhance the taste! Mix well.
Drop spoonfuls onto a hot pan with a “high-heat” oil like sunflower or flaxseed:
Flip them over when they bubble up like a pancake …
Cook a few minutes each side. Then place on a paper towel. Serve warm or cold! Enjoy!
