What is a constant though, is tasty food, and autumn is indeed soup season! A quick, hearty and inexpensive option for any family!
I woke up early and, on a whim, I decided to make a corn chowder. It is fast and tasty.
Just take 2 good-sized onions and chop them up fine
Add 2 cloves of garlic
… add to a large pot
… add a dash of oil or butter.
Sautee and add a ½ cup of water to prevent burning.
While that simmers, take 2 or 3 potatoes and cube them small into bite sized chunks. Add them to the pot.
Add 2 cans of whole corn – or a bag of frozen corn kernels works as well – or use both. To this you add a quart of milk – or cream for extra deliciousness! Also add 2 chicken bouillon cubes.
Stir until the potatoes are tender.
That is it!
You can add carrots to your corn chowder, as well. It is your soup after all!
If you want a thicker chowder, take 1 tablespoon of corn starch and add a little cold water. Make a paste. Add to your soup and stir. It will take a few minutes, but it will thicken up nicely.
