Simple Tuna Tartar

1 pound fresh tuna
2 tbsp. sesame oil (olive works too)
1 tbsp. fresh diced ginger
1/2 red onion diced fine
1 clove garlic diced super fine
1/4 cup chopped cilantro
1 shallot diced
3-5 tablespoons Tamari or soy sauce
juice from 1/2 a lemon
Place the tuna in the freezer for an hour – this makes it easier to chop into small pieces.
Remove the skin and cut into very small pieces and toss with the oil.
While the tuna is “chilling” chop the onions, shallots, garlic and grate the ginger and add to a bowl.
Add the cilantro and then the tuna – toss and add the soy/tamari sauce one spoon at a time – taste after 3 – you don’t want to drown out the flavor!
Squeeze a lemon over the mix, place in a bowl or ramekin and pack it in – then flip it over onto a plate.
Serve with your favorite kind of crackers!
